I made the fruit cake using a traditional Christmas cake recipe weeks before my son’s birthday and kept adding brandy to the baked cake (intended for the adults!!)to keep it moist! I had another cake for the kids!
I then covered it in warm apricot jam, allowed to cool then covered in marzipan. Leave for at least 24 hours. I then rolled out the ready to use fondant and covered, using a smoother for the first time! Then for the decorations I used water to get them to stick, they were just cut out using different size cutters. To hide rough edges I rolled up balls of fondant and decorated around the cake. The teddy bear was made from flower paste but should have used modelling paste as he did set hard and cracked. Used edible pens for detailing.
