Coolest Birthday Princess Cake

My daughter was turning one and I wanted to make sure that she had the perfect cake. So I looked around online and decided that I was going to make a Birthday Princess Cake. I bought a Wilton doll cake mold. I had to make sure it was dairy free so I used 2 Duncan Hines cake mixes.

I bought a Barbie to go inside because I didn’t like the doll that came with the cake. But I had to snap the feet off the doll to make it the right height. If I had known the doll would be too tall, I would have made an extra 9in round cake for the bottom. I wrapped the doll in plastic wrap. I cut a hole in the center of the cake so the doll would slide in the cake.

Then I used a Palette Knife to spread the frosting. Once I the frosting set I spread more frosting, smoothed the surface by using strips of parchment paper and running the flat edge of the paper up the cake. Then I took my Palette Knife and made swirls in the frosting to give it texture.

At the bottom of the cake I made stars and put sugar pearls in the center of each star and all over the dress. I made stars all over the top of the doll. Once the frosting had set I tied the #1 candle into the dolls hands with nude string. I think if I were to go back and do it over I would have put stars with pearls around the dolls waist so it would match the bottom of the dress.
