Coolest Mermaid Cake

This mermaid cake was for my friend’s daughter’s birthday. She was having a Little Mermaid birthday party and of course wanted a mermaid cake to go with the theme.

I used the Wilton doll pan for the “rock” she’s sitting on. We found a Barbie type doll that had red hair like the Little Mermaid does. I made a single layer 12″ round cake as a base. She wanted to keep the doll, so I tightly wrapped her legs in plastic wrap before pushing the entire lower half of the body down into the cake. She was a little taller than a regular Barbie so her feet were actually touching the cake board of the base cake. (This also meant cutting a hole in the board that the “rock” was on.)

When using the whole doll, you have to ease her into the cake fairly slowly to avoid having the cake’s sides split open, but a little icing can cover a multitude of mistakes! The rest is just buttercream icing and a few of those cake sparkles (from Wilton) for “scales” on her fish tail.

I thought it turned out rather well. I can’t wait to do another one, and she’s still playing with the doll!
