I made this train cake for my son’s 2nd birthday, having been inspired by some others on this website!. I did cheat a little bit with the actual cake – I bought two sponges and one Swiss roll and cut to shape. The icing is fondant icing colored with food colouring.
The grass is coconut and green food colouring. The funnel is a flake, the wheels are mini Jaffa cakes and the cargo is kinder bars and milky bar buttons. The tracks are chocolate fingers. I was going to do tracks the whole way along and balance the cakes on top but I forgot until the end and was scared I’d break it if I moved it! I think it still looks good though.
It was pretty simple but time consuming to make – my son loved it so it was all worth it!
