This Little Mermaid Cake was made for a baby’s first birthday. I had to work a double shift the day before the baby’s birthday party and didn’t get home from work until around 11:00 p.m.
I made the treasure chest and sea shells a few days prior to making the cake using molds and various types of melted chocolate. The only thing not edible on the cake was Ariel, which I thought would make a nice moments for the birthday girl’s family. I had baked the cakes before work and then decorated and assembled them afterward, through the night and into the morning. The middle layer had to be scraped clean of icing twice and redone because I was not happy with the look when finished but I finally got it right the third time.
I finished the entire cake at around 7:30 a.m., just as my two year old was waking up and my day had to start. The lack of sleep made for a long day at work that day but the happy reaction from the party guests and the baby’s family made it well worth it.
