Seahawk Birthday and Super Bowl Cake

This cake was made for my daughter’s 26th birthday party/Super bowl 2014. She’s a huge football fan and a little ball of fire. I knew it would make her day with a 12 layer Seahawk cake. This is 12 layers of blue and green vanilla coconut cake. I baked 2 basic white cakes adding 2 tsp coconut extract to each, one green and the other blue. Each layer is cut into 3 layers. Using cream cheese icing, I mixed 1 package softened cream cheese and 1 stick softened butter mix until creamed. Add 2tsp coconut extract, continue mixing. I used 1 lb. confectioners’ sugar, sifting it several times before using. Add slowly. Mixed on medium high speed for approximately 5 minutes. This will make it smooth and not gritty. I made 2 batches of this. It’s just too much for 1 large batch unless you have a very large mixer, which I do not.

Start layering and fill between the layers starting with blue and then green, cont. until finished. Crumb coat and put in the freezer for 30 minutes. Ice the cake with the cream cheese icing. I colored some icing green and piped grass over the top of the cake and added a gum paste football and 12th man flag. On sugar paper I drew a Seahawk and colored it in with edible markers and then piped a blue and green stripe around the top and bottom of the cake. Adding Skittles on the cake stand and a few on top making sure to not use any orange or blue (of course) The other side says The Legion of BOOM! I have to say that it was one of my daughters happiest birthdays ever! I’m pretty sure it was because of my cake. Maybe her team winning the super bowl helped. Happy Birthday Angel♥
