Coolest Kansas Jayhawk Cake

My husband Chris is a huge Kansas Jayhawks basketball fan, so I decided to make him a Jayhawk cake for his 35th birthday. I started with baking a cake in a 16 inch cake pan. It required two boxed cake mixes. Since a 16 inch cake is an unusual size, I couldn’t find a cake board to fit it on. I ended up going to a hardware store where I found a precut light-weight board that I wrapped with cake foil. After I baked the cake, I iced it with a whipped chocolate icing. I then used a toothpick to outline a Jayhawk on the cake. I colored Wilton’s decorator’s icing royal blue and outlined the entire Jayhawk. I also had to thin out this icing slightly by adding a little bit of water. I filled in the rest using a small star tip. To smooth out the eye, I piped in icing and then smoothed it down with my finger dipped in cornstarch. I completed the cake by making a border of big stars around the cake.
