This Mickey Mouse cake was exciting for me. Family and friends are always asking for my delicious desserts but it is rare I get to get creative with decorating! My niece loves Mickey Mouse! She was having a big party so I made the bottom vanilla and the top and cupcakes chocolate. I ran into two tricky problems. First was getting the color black! I should have used chocolate icing but hindsight is 20/20… I was near tears seeing too much purple.
My husband finally told me he thought it looked black and I went this it. The ears are actually chocolate cookies. I put black icing on them and the looked PERFECT! During the drive to the party the ears started to fall over and crumble. Luckily I had extra icing and toothpicks to hold it together. I originally made Minnie Mouse cupcakes, but when discussing the idea of Minnie with my niece she was upset because she wanted a strictly Mickey party! Who am I to go against the wishes of a 2 year old!? So I scrapped off the pink icing and used the black. I was so thrilled to see the excitement on her face when she saw the cake!
It was adorable, she lit up! She would not let anyone eat the Oreos dipped in chocolate because she said no one was allowed to eat Mickey. It took a while for anyone to notice, but I also wrote her name in Disney letters!!
