Coolest Race Track Birthday Cake

My husband and I made this Race Track Birthday Cake for my son’s 2nd birthday. We wanted to do something with cars since he loves them so much. It was very easy to make and did not take a lot of time.

What you will need:

Large Cake Pan 11 x 15

5lb. White fondant

4 tubs of buttercream icing

4 cake mixes of your choice

Rice Krispie treats

Dots candy

Two race flags

Black Sugar

Cars Figurines

Cars Candle

We started out by taking two mixes, we actually used butter recipe and devils food cake and poured them at the same time, but on opposite sides of the pan so that they were evenly distributed. Bake according to directions then slightly cool and flip onto counter top dusted with flour. Repeat with another two mixes.

Once both cakes are cooled, icing one cake and then top with the other. We then cut out the number two before coating with more icing. Once coated, we let sit overnight to slightly harden. Next cover the entire cake with the rest of the icing. Roll out one package from the 5lb box of fondant and cover the cake. You will need to cut the excess off and possibly even use a piece or two to fill the rounded inside edges.

Tip: to smooth the extra pieces, wet your fingers and smooth out. The road is simply black sugar placed on the cake to look like a road. We used a knife to make the lines in the middle. The stands are rice krispie treats cut to resemble stands and covered with fondant. Once they were set where we wanted them, we topped them off with dots candies to resemble the people in the stands.
