Coolest Spring Flower Basket Cake

I made this Spring Flower basket cake using the Course 2 materials from Wilton. There are spring flowers on top made with royal icing – the book gives the specific directions. The bluebird was made by tracing an outline of a bird with royal icing.

Once dried (only a few minutes), I thinned the icing down to pourable consistency. I slowly tipped it into the outline to cover all the areas, but not so much as it will run over the outline. It must dry several days and you should make extras because they break easily.

The outside of the cake is covered in a basketweave. I used a small oblong pan. TIP: Do not use a large pan. The basketweave takes a lot of time to do. There is actually a cake pan that comes with the course 2 materials.
