Coolest Castle Birthday Cake

I made this Castle Birthday Cake for my granddaughter’s 3rd birthday.I used the Wilton kit and instructions. I used the Wilton plastic round dowels and next time would probably opt for wooden dowels instead.

Also keep in mind that you need a cake that is dense enough to hold the layers or use a small divider plate between the larger and smaller layers to eliminate the bottom layers from being too packy. A cake that is too moist will not hold up under the weight.

I used Royal icing and Wilton Sugar Crystals for the cones and edges of the windows and door. The Royal icing was also used to cement the dowels to the bottoms of the towers. This was done in advance and hardened. I used buttercream icing for the cakes, flowers and leaves.

It is important to decorate as you go. When the top towers are placed they need to be decorated when put in place before another is added as it becomes too crowded. Also the borders need to be done around the edge of the top layer before adding the middle towers.

I piped a strip of buttercream icing up the side of the bottom layer and on the base to set the bottom towers and then filled in the flowers around it. I used the pastel colors and was pleased with the look however, I think a colored castle with white sparkled top would be interesting as well and would look like a winter wonderland.
