Coolest Castle Cake

Our friend was having a Princess party and wanted a castle cake. I bought the Wilton castle decorating kit and basically “dressed up” all of the plastic pieces that came in the box. The Turrets were covered in fondant, the windows were “painted” with colored piping gel, and the door and shutters were used as a stamp to a piece of fondant that was then cut to make the doors look like they were open.

I made flags and flag poles completely out of fondant to add to the tops of the turrets. The step is two graham crackers covered in fondant tinted with gold shimmer dust. All of the flowers were made out of either royal icing (pansys and drop flowers), fondant (for the roses) and buttercream (for filler and for the leaves).

The actual cake was baked in several pans. The bottom tier was three 12 inch square pans. It was a lemon cake with raspberry filling. The center layer of the bottom tier was colored pink for a striking effect. The middle tier was a two layer chocolate cake with chocolate filling baked in an 8 inch square pan. And finally, the top tier was carved out of chocolate cakes baked in 3 x 5 inch loaf pans.

The overall effect I was going for was for the cake to look like a centerpiece and not just a birthday cake. My inspiration came from the invitations (which was an illustration of a pink castle with purple turrets). It took many hours of preparation not just to figure out the overall structure, but to create the many pieces it took to put the whole cake together. I’m pleased with the results and can’t wait to get started on my next creation.
