Coolest Princess Glitter Castle Cake

This princess glitter castle cake is amazingly easy. Just a large square cake, and a smaller round on top. I just used a simple vanilla butter cake, something fairly dense so it doesn’t sink, as it is quite heavy. I made two square cakes and joined them together to get the height. I put some white chocolate ganache in between the layers so it wasn’t too dry.

The icing was just a butter cream, using 1/2 butter 1/2 copha to get it really white. There are lots of recipes online. I made a double batch to cover the whole cake. I flavored the icing with strawberry essence to make it really yummy.

Join the cakes together and cover in the icing. I sprinkled all over with a white edible glitter so it is all sparkly. Use a big cake board so you have room for the turrets. The 4 large turrets were made with 3 ice cream cones. I made a smaller turret with just two cones for the top. I used silver edible spray paint for the bottom part of the turrets. For the top I drizzles with a really watery pink icing and covered with pink edible glitter.I joined each of the sections with white icing.

The windows and doors were made with wafers, cut to size. They were sprayed with the edible spray paint and piped with pink icing. Silver balls for door handles. To decorate I used edible diamonds, smarties for brick work and mini marshmallows for the top.

It is a good idea to make the turrets and prepare the doors and windows first so they are dry before you start putting the cake together.

My daughter loved this cake for her 3rd birthday.
