Coolest Monster Jam Birthday Cake

I got the idea for this Monster Jam Birthday Cake for my great nephew’s 3rd birthday by searching coolest-birthday-cakes.com. There were many wonderful ideas and I took pointers from some of the postings.

I used a large roasting pan [11x15x1.5 inches] and two cake mixes [one chocolate, one white] for the main slab. I had hubby hold a piece of cardboard across the middle of the pan and poured the chocolate on one side and white on the other, then pulled the cardboard out. I also used one chocolate cake mix baked in a loaf pan for the ramps. I cut the loaf in half [freeze one half for later use], then diagonally and trimmed them a bit to make them more to ‘scale’ with the Monster Jam cars. Make sure the cakes are completely cold before icing and assembling.

I used butter icing dyed green for the slab, ramps and ‘grass’. Don’t forget to put a dollop of icing on the cake board so the slab won’t slip off. Once the slab is iced, position the ramps and ice them. Don’t make the icing too thick. Once assembled, I used Oreo crumbs for the top of the ‘field’ and graham crumbs for the ‘track’. In between the ramps I used chocolate rocks. I piped icing grass around the edges. Add the cars and some racing candles and there you have it.

I’m a beginner at this, it was fun and the look on his face was worth the effort.
