For Memorial weekend, we had a last minute get together. I decided to make some kind of a Patriotic Cupcake Cake using my giant cupcake pan. I made that cake a carrot cake. For the bottom, I used white icing and cut red stripes from sugar paper. Knowing that children would not like the carrot cake, I used a boxed cake mix for the cupcakes and put red food coloring in half of it and put the mix into the cupcakes.
For the icing, I used cream cheese frosting layering it into the icing bag for the swirl effect alternating white and blue icing. I got a star chocolate mold and put white chocolate on lollipop sticks and then stuck into the cake for stars. For a little extra flair I just put the American flag picks into all the cakes.
