Cool Homemade Easter Cupcakes

I made these Easter cupcakes for my four-year old son’s nursery school class.

I used some buttercream icing to “glue” the marshmallow bunnies to the top of the cooled cupcakes. Then I used a grass tip to completely cover the top of the cupcake with buttercream icing tinted green. I built up the grass around the bunnies to be sure they wouldn’t tip over.

The basket handle is just twisted licorice bent and stuck into the cupcakes (make sure the licorice is fresh so it bends easily).

Then I put small jelly beans in the “grass” for the finishing touch.

Other Easter cake ideas: You can ice the cupcakes and sprinkle with coconut flakes tinted green instead of using a grass tip. Use marshmallow chicks if you use the coconut, so you don’t have to worry about them falling over. You can also do this with sugar cookies: ice them and decorate with marshmallow bunny or chick, jelly beans, tinted coconut, etc. You’d probably have to omit the licorice, but you’d still have a cute Easter cookie!
