Coolest Salad Cake

We were celebrating an Anniversary of a co-worker. Her lunch everyday is salad so we thought it would be fitting to have a salad cake for her party. I baked the cake in a round casserole type bowl. I used a pound cake type recipe so I would have a firmer cake to work with. I iced the entire cake in buttercream icing – you can use the color of your choice for the “bowl”.

I made the lettuce with the leaf mold from the gumpaste flower kit with fondant. I did the appropriate colors of fondant for the cucumbers, tomatoes and cheese. I painted the color on the edges of the cucumbers after I made them and used the end of a small paint brush for the center marks. The croutons and leftover pieces of cake cut in small cubes. The utensils are also made of fondant.
