Coolest Princess Castle Birthday Cake

My princess wanted a Princess Castle Birthday Cake for her 3rd birthday and how can a mum say no to such a request. I started off by baking a large rectangular cake that I used as a base. I then baked another 2 same sized square cakes that I placed on top of each other.

Next I baked another cake, this time a round one that I placed right on top. Four tiny muffins served as towers for my castle cake. Ice-cream cones dipped in icing sugar and coated in 100s & 1000s brightly coloured sprinkles gave a finishing touch to the towers.

I used ready made icing paste to cover and decorate all the cakes. Of course the main colours had to be lilac and baby pink, fit for a little princess! I decorated the cake with flower-shaped marshmallows. I placed tiny Disney princess dolls around the castle – we ordered these from eBay and they arrived right on the day I was setting up the cake, this was a huge surprise for our daughter and indeed made her birthday a special one.

TIP – ideally you bake cakes in advance and freeze them so on the day you are assembling the cake you just have to worry about decorating it. I promise it is easy to make. I loved preparing mine and the look on your daughter’s face will be the greatest reward you’ll get for preparing the cake. Enjoy!

  1. This cake looks really great. As you say fit for a princess. You make it sound quite easy the way you write it out. I got to try that freezing the cakes thing since baking so many cakes on one day will be difficult. I might try the same idea for a desert island cake for my son.

    Thanks

  2. Awesome. Looks much more than a ‘cake’ to me :-) It must be a humongous challenge to fit the pieces together without breaking them all up. Pity you didn’t include the actual cake recipe in there or is it secret? :-) Was the cake filled with something? jello? cream?

On another note… you have a terrific pen and your descriptions are captivating. Have you ever thought of writing on the grand scale? I could see the cake coming together as I read about it.

  3. Wow Elaine! Can you please come and help me with Bella’s Birthday cake? Her theme is Winnie the Pooh.

That is the best princess cake yet!

  4. Thanks for your comments. Recipe is no secret and am very happy to share it. I have this amazing kids’ b’day cakes book put together by the Australian Women’s Weekly and I use their rich chocolate cake recipe that never lets me down:
The quantities usually are good for a 20cm pan, so double amounts accordingly-
    200g self-raising flour
    50g cocoa powder
    125g butter, softened
    1 teaspoon vanilla essence
    275g caster sugar
    2 eggs
    160ml water
Preheat oven to moderate 180-190 Celsius.
Sift flour & cocoa in a bowl, add remaining ingredients;beat on low speed with electric mixer until all is combined. Bake until cooked.
