Coolest Princess Castle Cake

This is the princess castle cake I created for my daughter’s 3rd birthday. It was a huge hit to say the least!

I used two funfetti cake mixes, 2 cans of strawberry whipped frosting, 3 cans of funfetti vanilla frosting (left out the sprinkles though), 5 waffle cones, 9 colored ice cream cones, a little green colored sugar, and a pack of princess sugar cake decorations.

The cake was constructed with 2 9in round cakes (leveled and stacked) and one 9×13 cake. The 9×13 was cut to make the middle level of the cake, the very top round layer, and the sides coming off of the round bottom level. It is very simple to assemble, though you need time and much patience. After cutting all the needed cake pieces, I assembled the castle (minus the cones) and placed it in the freezer for 15 minutes.

Next I dirty iced the cake and let it sit in the refrigerator over night. The next day I did a final layer of icing and added the piping. Finally I “glued” the cones together with frosting and added them to the castle. Last, but not least I added the princess sugar decorations.

My little princess thought it was BEAUTIFUL! It made my day to see her so happy with her princess cake, and I plan to make another one for her larger party next weekend in a sand castle version.
