My son is really into The Little Einsteins, so for his birthday my wife decided to have that as the theme. She bought all the party favors then looked for a cake pan. Well, she didn't find one. So I studied the picture of Rocket and came up with an idea. We had two oval roasting pans, a big one and a small one. I used two cake mixes in each. This made the big one short, and the small one tall. I then leveled the big cake. I placed the small one on top, with about 1 inch hanging off the back. I trimmed the back to match the bottom cake and carved the top to be more curved.

Using butter cream icing, I iced it with #32 tip. Piped with #2 tip and used a balloon candle for the top. For the rockets I used small metal condiment cups I found at the store. The cake was too "fluffy" and light to stay on so I used muffin mix, it's more dense and held up great. I baked 4 of these and used toothpicks to hold them together.

Then I used 4 (2 for each rocket) 1/4" diameter dowels cut about 3 inches long to connect them to the side of the cake. A friend of my sons (she's four years old) saw it and knew exactly who it was. Everybody loved it, hope you do too.

Red icing

How did you get your icing so red? I've used an entire jar of Wiltons no taste red and still have pink icing.. HELP!!!

RED ICING

If you want vibrant colours you need to use powder food colouring. I leared the miracles of it when I made a "Very Hungry Caterpillar" Cake for my son's first birthday. This year he's 3 and he'd like "rocket".

Red Icing

Wilton "red red " works best if you are using red color by Wilton. you get used to what it looks like when you have done it lots but it will look pinkish red at first but Wilton colors change after it sits for a bit. you do need quite a bit of the color but definitely not the whole jar. make it ahead of time so you can experiment with the amount of color to put in as you leave it sit for a bit. you can also mix it in smaller batches and then combine it. the more icing you want to make red, the harder it seems so i often split the batch then mix together afterwards. hope this may help a bit. it took me a while to master red icing!! i can remember being very frustrated!!

Brand for powdered color

Where can you get the powdered food coloring here in US and what brand? I heard it has an after-taste though?...
