My friends and I made this Sushi Candy birthday cake for my 30th Birthday party. The cake was actually a delicious store-bought chocolate ganauch cake, but the toppings were all sushi that we made ourselves at home. I did a lot of research online to get ideas.
Sushi Rice: Rice Krispy Treats. They are surprisingly easy to mold into little rice “logs”. Dip it in white chocolate and then roll it around some shredded coconut for a rice texture.
California Rolls: Used Rice Krispy Treat as the base. Added some orange/yellow sprinkles to the coconut to give the look of masago. Then topped it with cut little pieces of kiwi, dried fruit in different colors for the crab, avocado, etc.
Tamago Sushi (Egg Sushi): Used the Rice Krispy Treat rice. Topped it with a sliced half of Twinkie. Then used Black frosting that comes in those small squeezable tubes to “paint” on the seaweed wrap around it.
Unagi Sushi (Eel Sushi): Used the Rice Krispy Treat rice. Topped it with a long strip of dried bananas which can be purchased at Trader Joe’s. Painted on the seaweed wrap.
Salmon Sushi: Used the Rice Krispy Treat rice. Topped it with a long strip of dried mango that we scored lined into and filled with white frosting.
Ikura Sushi (Salmon Roe): My favorite! Used the Rice Krispy Treat rice but didn’t roll it in coconut, just painted it all black instead. I molded the Rice Krispy so it sort of formed a little well in the middle. Then I cut up small chunks of dried fruit and rolled them so they became round. Dipped it in orange/red gel frosting and placed into the well.
Uni Sushi (Sea Urchin): Used the same Rice Krispy Treat rice with black frosting paint, formed a well and filled it with a smooth white chocolate that was colored orange-yellow.
Masago Sushi: Used the same Rice Krispy Treat rice with black frosting paint, formed a well and filled it with yellow/orange sprinkles.
