This Med School graduate cake was made with one day notice! If you can believe it! Turns out it’s one of my favorite cakes to date.
Yummy devils food chocolate cake with a strawberry whipped filling and whipped frosting covered in fondant.
2 cups flour
2 cups sugar
3/4 cup cocoa
1-1/2 teaspoons baking soda
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup whole milk
1/2 cup oil
2 teaspoons vanilla
1 cup boiling water
Preheat oven to 350 degrees F. Grease and dust with cocoa two 9″ layer cake pans. Set aside.
In large bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt. Stir with wire whisk until blended. Add eggs, milk, oil, and vanilla and beat well with wire whisk or mixer until combined, about 2 minutes. While beating, heat water in microwave oven to boiling. Stir boiling water into cake batter.
Pour the thin batter into the two prepared pans. Bake at 350 degrees F for 30-35 minutes or until cake pulls away from sides of pan and a toothpick inserted in center comes out clean. Cool 5 minutes, then remove from pans and cool completely on wire racks.
Ingredients for whipped frosting:
1/2 teaspoon gelatin powder
2 tablespoons cold water
1 cup whipping cream
1 speck salt
2 tablespoons confectioners’ sugar
1/2 teaspoon lemon juice
Sprinkle gelatin over cold water in small bowl to soften. Scald 2 tablespoon cream; pour over gelatin, stirring till dissolved. Refrigerate until consistency of unbeaten egg white. Then, mix with hand beater, beat until smooth. Whip remaining cream; add salt, sugar, lemon juice; fold in gelatin mixture.
Once cake is cool place on display board and fill with whipped strawberry frosting. When finished stack second cake on top and frost with whipped frosting. Cool in refrigerator for at least an hour.
Roll out fondant and begin cutting out fondant decor. Once cake is cool cover with fondant icing, trim excess from bottom and begin placing decor on cake.100% edible and super delicious!
Cake was adorned with a fondant made stethoscope, band aides, Red Cross, reflex hammer and pill bottle. All things medical related!
